This is the End...

The end of a chapter. Just as life cannot go on forever, neither can my "Life" blog. I will be starting a new blog, dealing with recipes and cooking and baking. Hopefully, it will do well. This has been a grand little adventure, my first blog. To those few, precious friends who have read it and prayed for and encouraged me, thank you. I love you.

Bruschetta

Bruschetta Recipe: (this is for a relatively small amount. You can always multiply it to make more!)

1/2 red onion (baseball sized onion)
fresh basil or dried basil, depending on availability
4 cloves garlic
2 Roma tomatoes
small splash of vinegar
2 Tablespoons olive oil or safflower oil (olive oil has more taste, but safflower oil is ridiculously good for you)
pinch of course kosher salt

Just throw it all in the food processor and pulse until it is the consistency of a salsa.

Our bruschetta day included:

                         Breakfast - bruschetta eggs with cheese and Jimmy Dean turkey sausage links. Yum!


Lunch - toasted onion rolls with melted mozzarella and (cold) bruschetta!


Dinner - Bruschetta crusted pork roast and buttered noodles. Mmmm!

A Calm Tuesday

Today really has been a pretty good day. My oldest is away until tomorrow, so I miss her immensely, but I did have fun with the other two. We did our schoolwork early, then we began making flowers for the Resurrection Day cake I'm making. Then we had lunch and decorated some eggs. After that, we went to the park. On the way home, I bought them ice cream. (I bought one for me also, but it was way too sweet!) Then my Mother n Law came over with beautiful Easter outfits for the kids. They were so nice! I think they can just use the ones I got them for whenever; You can never have too many dressy clothes!

My one concern today is all of the tornadoes in Texas, right near where Ali and the boys are. But she texted that they are alright, so thank God for that!! (It's sweet little Judah's birthday today.)

I also went nuts with the bruschetta today! I will post the recipe and ideas separately.

Tonight's dinner is bruschetta crusted pork roast, egg noodles, and salad.
